One&Only The Palm’s Two Michelin Star restaurants, STAY by Yannick Alléno and all-day dining concept Zest, celebrate white truffle season with a showcase of dishes championing the prized tubers from the forests of Alba in northwest Italy.
Celebrity Chef Yannick Alléno has thoughtfully curated a menu for STAY where guests are invited to embark on an indulgent culinary journey with truffle taking centre stage, masterfully harmonised for the star of the season to shine through each dish. The four-course Truffle Menu exploration begins with Comte Souffle with White Truffle, followed by a choice of Turbot Poached with White Wine or Pan Seared Veal Tenderloin with Salsify, further complemented by Brillat-Savarin Cheese with Black Autumn Truffle. The meal ends on a sweet note with a White Truffle Fuseau, an ode to Chef Yannick’s witty culinary style that marries the white truffle aroma with velvety white chocolate mousse. The Truffle Menu is available until the end of January and can be experienced for AED1050 or AED1700 per person, including the exclusive sommelier selection.
Newly refurbished and refreshed Zest restaurant reopened earlier this month with a promise to transport guests to the heart of Italy with regionally inspired dishes, a dedicated Pizza Bar and an authentic Pizzaiolo. Zest welcomes diners to join the celebrations and choose to add white truffle to any dish of their choice at AED90 per gram – a true feast for the senses!
